If you’ve ever wanted to be a fly on the wall around people who are passionate about anime, manga, and the culture of Cool Japan in America, here’s your chance. I attended Sushi Night this past Saturday with the Austin Anime Meetup Group, where I and 6 others enjoyed the fare at Ryu of Japan and discussed our favorite topics. I recorded much of it on video, which I’ve edited and posted below, and we took lots of pictures.

Enjoy. But more importantly, join us next time. It really is a Gendai Shikaku Bunka Kenkyukai (現代視覚文化研究会), or Society for the Study of Modern Visual Culture.

On October 25th, Jorge, the sushi chef from Kenichi, came back for a second sushi workshop for the Japan-America Society of Greater Austin. Roughly 20 people showed up, equipped with razor-sharp knives, to learn how to slice up some raw fish. (Well, actually, it’s a little known fact that fish for sushi isn’t raw. It has to be frozen for a minimum of 36 hours before it can be thawed and prepared as sushi or sashimi in order to kill off bacteria.)

The lesson plan for the day was learning how to prepare rice for sushi, properly slicing the fish, making nigiri sushi, and preparing a Rainbow Roll.

While you can use these recipes to prepare your own sushi, you should probably attend one of these sushi workshops in the future to pick up on some of the nuances of making sushi. I’ll keep you posted on any future workshops you can attend.

Kyoto Roll at Sushi Sake

Following up its successful Sushi Workshop in July, the Japan-America Society of Greater Austin will present sushi chef Jorge from Kenichi for an advanced sushi workshop on Sunday, October 25th at the Triangle Clubhouse (4700 Guadalupe St.) from 1:30pm to 3:30pm. This workshop will allow attendees of the previous workshop to build on their sushi-making skills.

Topics will include:

    Jorge, Eri, and Kako
  • Making sushi rice
  • Maintaining and using sushi knives
  • Handling different types of sushi fish and sushi ingredients
  • Making advanced rolls, like the Rainbow Roll, and nigiri sushi
  • Slicing, preparing and presenting sashimi

This is not a free event. The cost for current JASGA members is $35. If you’re a non-member (and why on earth haven’t you joined yet??), your cost is $40 (Please bring exact change in cash). These prices include all ingredients necessary to make sushi, however you’ll need to bring your own knife and a towel or cloth of some sort.

Please note that registration is required in order to attend this class. Space is limited. Send a registration request to jasga-events@jasga.org by Thursday 10/22. … A 48-hour notice is required in order to cancel.
